Sweet, anise-scented leaves and stalks (fresh or dried) add delightful flavour to sweets and desserts, saving about half the sugar. Of particular interest to diabetics.

Remove flowering tops as they appear to keep leaves tender. Blonde de Lyon is the standard variety esteemed in France. Most famous for sorrel soup. Large, succulent, slightly acid-tasting leaves give zest to salads and any dish which is insipid in itself.

This is a completely different mint with a completely different role in the kitchen -- as a fresh salad green! The young leaves are tender and the flavour is mild, sweet and delicate, not at all like other stronger mints that can easily overpower.

Excellent for massing, as ground cover or in rockeries. (Catmint) Smaller ornamental form of catnip with lavender-blue flowers and grey-white foliage. Does not attract cats despite its stronger, more pleasant scent.

It's hard to play favourites with your babies, but for mint breeder Jim Westerfield, this one always held a special place in his heart. Interestingly, the sweet lime aroma of fresh-cut leaves actually gets stronger when stored overnight.
